Ingredients
- 3 cups apple cider
- 1pkg (.49 oz) concentrated chicken broth
- 1 Tbsp chopped fresh thyme
- 1 Tbsp chopped fresh rosemary
- 1 clove garlic, minced
- 1 Tbsp fresh lemon juice
- 1 whole roaster chicken

Heat oven to 350 degrees. In pot over high heat, bring apple cider to a boil; lower heat and let simmer 8 minutes or until reduced to 1/3 cup. Remove from heat. Stir in chicken broth, thyme, rosemary, garlic, and lemon juice. Season chicken with salt and pepper. Tie legs together with twine. Place chicken on a rack set in roasting pan; lightly coat with cooking spray. Roast chicken 1 hour, basting frequently with cider glaze. Let sit 10 minutes before slicing.
