Rabbi Stephanie’s vegetable bake

Ingredients
- 1 medium eggplant
- 1 large potato (maybe 2)
- 1 medium zucchini (maybe 2)
- 4 fresh tomatoes
- 1c bread crumbs or matzo meal
- basil
- parsley
- 3 eggs
- 1/2 c olive oil
- 1-1/2 cup grated mozzarella
- 1c grated parmesan
Directions

Slice eggplant into ½ inch rounds and bake at 400F till just tender (30 min? )

Slice potato and boil till just tender

Slice zucchini and tomatoes

Mix:1c bread crumbs or matzo meal with basil and parsley

Beat eggs
-
Oil: 9 × 13 baking pan

Layer as follows:

1/5 bread crumbs

Eggplant slices
-
2T olive oil
-
1/5 bread crumbs
-
¼ of each of the cheeses
-
¼ beaten eggs
-
potato slices
-
Repeat 3,4,5,6
-
. zucchini slices
-
Repeat 3,4,5,6
-
. tomato slices
-
Repeat 3,4,5,6
-
Bake: covered at 375 for 45 minutes. Let sit 10 minutes before serving or refrigerate or freeze and reheat.
