Ingredients
- 2 aubergines
- 20ml oil
- sea salt
- 3 large tomatoes
- 3 cloves garlic
- 2 tsp paprika
- 1/2 tsp cumin
- 1 red chilli
- 1 tbsp brown sugar
- 1 tsp salt
- 20ml lemon juice
- 20ml red wine vinegar
- pepper
- 3 tbsp fresh parsley
- 3 tbsp fresh coriander
Directions

Roast 1cm aubergine slices at 200C 30 mins.

Fry everything else for 10 mins.

Remove from heat and add juice, vinegar, aubergine and herbs.
