Pumpkin cupcakes

Ingredients
- Cupcakes:
- 2 sticks butter (softened)
- 1 1/2 cups sugar
- 4 eggs
- 1 cup pumpkin puree
- 1 tsp vanilla
- 2 cups flour
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- Icing:
- 8 oz cream cheese
- 1/2 stick butter (softened)
- 1 1/2 cups confectioner's sugar
- 1 tsp vanilla

Cupcakes:

Preheat oven to 350 degrees and line 18 muffin cups.

Beat butter and sugar together in a mixer until fluffy. Then, beat in eggs, pumpkin, and vanilla. Sift flour, pumpkin pie spice, baking powder, baking soda, and salt together; stir into pumpkin mixture.

Spoon into lined muffin cups 3/4 full. Bake 25 minutes, then allow to cool completely.

Beat cream cheese, butter, sugar, and vanilla until smooth and fluffy. Spread onto cupcakes.
