Pumpkin Roll

Ingredients

  • Cake:
  • 3 eggs, beaten
  • 3/4 cup sugar
  • 2/3 cup pumpkin
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 3/4 cup flour
  • .
  • Filling:
  • 8 oz cream cheese, softened
  • 1 tsp vanilla
  • 2 tbsp soft butter
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 350F. Grease and flour jelly roll pan.

  2. Mix eggs, sugar, and pumpkin together.

  3. Add in salt, baking soda, cinnamon, nutmeg, and flour in slowly. Mix well.

  4. Pour batter into pan. Tap pan to get out all air bubbles.

  5. Bake for 15 minutes at 350F.

  6. Loosen edges with spatula and turn onto a towel covered with powder sugar.

  7. Roll cake up in towel and let cool.

  8. For Filling: Mix cream cheese, vanilla, butter, and powdered sugar until creamy.

  9. Spread over cooled rolled out cake. Roll back up and freeze.
