Thai Peanut Meatballs

Made for New Years Eve 2013. 1 lb meat worked for 4 adults and 4 kids. Could have had more though. Made 25 meatballs.

Cook time: 10 minutes
Serves 8 people

Ingredients

  • Meatball Ingredients
  • 1 lb ground beef, or lamb, or turkey
  • 2 tbsp hoisin sauce
  • 3 green onions, finely chopped
  • 1/2 tbsp cilantro, minced
  • 1 egg
  • 2-3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sesame oil
  • Panko
  • Sauce
  • 1 cup coconut milk
  • 1/3 c hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp creamy peanut butter
  • 2 tbsp cilantro, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp lime zest (keep the rest of the lime for garnish)
  • 1/8 tsp crushed red pepper flakes

Directions

  1. Bake meatballs at 350 for 10 min.

  2. Put meatballs and sauce in crockpot on high for 1 hr.

  3. Reduce heat to low for 2 hrs.
