Thai Peanut Meatballs

Made for New Years Eve 2013. 1 lb meat worked for 4 adults and 4 kids. Could have had more though. Made 25 meatballs.

Serves 8 people
Ingredients
- Meatball Ingredients
- 1 lb ground beef, or lamb, or turkey
- 2 tbsp hoisin sauce
- 3 green onions, finely chopped
- 1/2 tbsp cilantro, minced
- 1 egg
- 2-3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp sesame oil
- Panko
- Sauce
- 1 cup coconut milk
- 1/3 c hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp creamy peanut butter
- 2 tbsp cilantro, minced
- 1 tbsp fresh ginger, grated
- 2 tsp lime zest (keep the rest of the lime for garnish)
- 1/8 tsp crushed red pepper flakes
Directions

Bake meatballs at 350 for 10 min.

Put meatballs and sauce in crockpot on high for 1 hr.

Reduce heat to low for 2 hrs.
