Baked Oatmeal

Ingredients

  • 6 cups oatmeal
  • 1 cup brown sugar
  • 4 tsp baking powder
  • 2 Tbsp butter
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup applesauce, cranberry sauce, any kind of fruit sauce
  • 2 tsp vanilla (if using cranberry sauce, use 1/2 tsp almond extract instead)
  • 4 eggs
  • 2 cups milk
  • 1 cup raisins (optional)
  • 1 cup chopped nuts (walnuts, etc)

Directions

  1. Preheat oven to 350 degrees

  2. Mix dry ingredients in mixer bowl, add in the wet ingredients, then add raisins and walnuts.

  3. Spread into a 9×13 pan, bake for 20-30 minutes.
