Chicken Cordon Bleu Casserole

Ingredients
- 1 lb chicken breasts, cubed
- 3 tbsp butter
- 1 bag frozen cauliflower
- 1/2 cup chicken broth
- 12 oz ham, diced
- 1/2 cup onion
- 1-1/4 cup heavy cream
- 1 cup Parmesan cheese, divided
- 1/2 cup sour cream
- 3.5 oz shredded swiss cheese, divided
- salt
- pepper

Preheat oven to 350F

In a large skillet over medium-high heat, brown chicken in butter; once both sides are browned, add ham and onion

Cook cauliflower in chicken broth until fork-tender; drain and then fork-mash the cauliflower

a medium sauce pot, combine heavy cream, 1/2 cup Parmesan, sour cream, 1.5 oz swiss cheese, and salt and pepper to taste; bring to a boil then reduce heat to simmer 10 min, stirring frequently

Combine cauliflower, meat mixture, and sauce and place in a 8×8 baking dish

Top with remaining swiss and Parmesan cheeses; bake 25 min
