Ingredients
- Russet potatoes, as many as you need to feed your family.
- Water
- Salt
- 1/2 to 1 stick margarine
- 1/2 cup chopped fresh parsley
Directions

Peel potatoes. If it is a large potato cut into 8ths.

Place in sauce pan and cover with water.

Add salt.

Bring to a boil and simmer until potatoes are just past fork tender…about 20 minutes from boiling point.

In the mean time put margarine in microwave proof dish. Add chopped fresh parsley. Microwave until butter is melted. Set aside for later.

Drain off all water from potatoes.

Stir in the melted margarine and parsley until melted. Some of your potatoes will break up…that’s good.

Serve.
