Mexican Quinoa with Fried Egg

Ingredients
- 1 cup quinoa
- 2 cups broth of choice
- 4 cups packed romaine
- 3-4 thinly sliced Roma tomatoes
- Minced cilantro
- 1/8 cup red onion
- 2 cups spinach
- 1 lime or lime juice
- 1 or 2 eggs per plate
- 2 avocados sliced
Directions

Cook quinoa in broth

Layer lettuce, tomatoes, cilantro, onion and spinach in that order

After 5 min of cooling, spread quinoa over salad

Let sit so spinach wilts a bit
-
Add lime juice and shake
-
Fry eggs over easy and place on salad

Top with avocado and salt and pepper to taste
