Ingredients
- 1 package Rice-a-Roni Spanish Rice
- 2 tablespoons butter
- 2 cups water
- 1 jar (16 oz) salsa
- 3 boneless, skinless chicken breasts, cut into strips
- 1 cup black beans, drained
- 1 cup corn, drained
- 8 (6 inch) tortillas, warmed
- Shredded Cheddar cheese
- Sour Cream
Directions

In a large skillet over medium-high heat, saute rice-vermicelli mix with butter until vermicelli are golden brown.

Slowly stir in water, salsa, chicken and seasoning packet; bring to a boil. Reduce heat to low. Cover and let simmer 15-20 minutes or until rice is tender and chicken is no longer pink in the center.

Stir in beans and corn; let stand 5 minutes. Serve in tortillas with Cheddar cheese and sour cream.
