Duck jerky Marinade

Ingredients

  • 1 Tbsp. meat tenderizer
  • 1 Tbsp. liquid smoke
  • 2 Tbsp. brown sugar
  • 1/4 tsp. ground ginger or soy sauce
  • 1 tsp. Tabasco
  • 2 tsp. onion powder
  • 2 tsp. black pepper
  • 2 tsp. garlic powder

Directions

  1. Trim all visible fat and slice meat against the grain into strips about 1/4 inch thick.
  2. Mix all ingredients together. Layer meat into a dish 3 to 4 layers deep. Between each layer, cover with marinade. Cover with plastic wrap and refrigerate overnight.
  3. Remove from marinade, and shake off excess. Place in a single layer, not touching on the rack of the dehydrator. Process 8 or 9 hours. Turning every 1 1/2 hours and rotating the racks from top to bottom.
  4. meat should be crisp, but not too brittle.
