Southwest Ham ’n Cheese Quiche

Ingredients

  • 4 - 8 inch flour tortillas
  • 2 tablespoons butter, melted
  • 2 cups cheese, pizza 4-cheese blend, shredded
  • 1 1/2 cups ham, diced
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 3 eggs, beaten
  • Salsa
  • Sour cream

Directions

  1. Heat oven to 350 degrees. Cut 3 tortillas in half. Place remaining whole tortilla in bottom of greased 10 inch quiche dish; brush with melted butter.

  2. Arrange tortilla halves around edge of dish, rounded sides ups, overlapping to form pastry shell. Brush with remaining butter. Place 9 inch round cake pan inside quiche dish. Bake 5 minutes. Cool; remove cake pan.

  3. In a medium bowl, combine cheese and ham. Stir in sour cream, salsa and eggs. Pour into tortilla shell. Bake 55-60 minutes or until knife inserted comes out clean. Let stand 5 minutes. Serve with additional sour cream and salsa.
