Upside-Down Ham Loaf

Ingredients

  • 3 Tbsp. oleo or butter
  • 1/2 cup brown sugar
  • 5 slices pineapple
  • 3 1/2 cups ground ham
  • 3/4 lb. lean pork
  • 3/4 cup dry bread crumbs
  • 1/3 cup milk
  • 3 eggs, beaten
  • 1/4 tsp. black pepper

Directions

  1. Melt oleo in baking dish. Sprinkle with brown sugar.
  2. Arrange pineapple slices on top of sugar. Mix ham, pork, bread crumbs, milk, eggs and pepper. Put on top of pineapple slices and sugar.
  3. Cover; bake at 400 degrees 40 to 45 minutes. Reduce heat to 300 degrees; remove cover.
  4. Bake 20 minutes longer. Let cool slightly; turn out on dish.
