Citrus- Glazed Apple Stuffed Pork Chops

Ingredients

  • cooking spray
  • 2 tsp. olive oil
  • 1 McIntosh or Granny Smith apple, diced
  • 1/4 cup chopped red onion
  • 1/2 cup plus 2 Tbsp. Polaner Sweet Orange
  • marmalade, divided
  • 1 Tbsp. plus 2 tsp. Mrs. Dash Lemon Pepper
  • Seasoning Blend, divided
  • 4 thick-cut, bone-in pork loin chops (about
  • 5-6 oz. each)

Directions

  1. Preheat oven to 350 degrees. Coat a shallow roasting pan with cooking spray.

  2. Heat oil in a skillet over medium-high heat. Add apple and onion; cook 2-3 minutes, until soft. Add 2 Tbsp. of the marmalade and 2 tsp. Mrs. Dash lemon pepper, and stir to coat. Remove from heat.

  3. using a sharp knife, cut a pocket into each pork chop by slicing crosswise into the side of chop and almost through to the other side (the bone side).

  4. Spoon apple mixture into pocket and transfer stuffed pockets to prepared pan.

  5. In a small bowl, combine remaining cup of Polaner marmalade and 1 Tbsp. lemon pepper. Mix well. Spoon mixture over pork chops.

  6. Bake 45 minutes, until pork is tender and cooked through (still slightly pink in the center is perfect; or use a meat thermometer and remove pork form oven when internal temperature reaches 160 degrees.)
