Ingredients
- 1 1/2 cups oats
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup ground flax seed
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 large oranges (navel)
- 1 cup brown sugar, packed
- 1 cup buttermilk
- 1/2 cup canola oil
- 2 eggs
- 1 1/2 cup golden raisins*
Directions
- Preheat oven to 350 degrees. Line 2 medium muffin pans (2 1/2 inch muffins) with paper liners.
- In a medium bowl, mix all dry ingredients (except brown sugar) together. Set aside.
- Wash and cut stem end off oranges. Cut into small equal pieces, skins and all. Put into bowl of food processor and pulse until pieces are about the size of large raisins.
- Put oranges into a large bowl, and add all the wet ingredients, including brown sugar, and stir to incorporate. Add dry ingredients: stirring by hand until blended. Fold in raisins, and stir to distribute evenly. Let stand 3 minutes.
- Fill muffin cups to the top. Bake 40 minutes. Remove from pan and cool on wire rack.
