Ingredients
- 1 lb. dark-brown sugar
- 2 cups cider vinegar
- 1 clove garlic, minced
- 1/3 cup thinly sliced crystallized ginger
- 2 Tbsp. mustard seed
- 2 tsp. ground cloves
- 1/4 tsp. cayenne
- 1 tsp. salt
- 1 lemon, seeded and thinly sliced
- 1/2 cup raisins
- 3/4 cup chopped green pepper
- 1 cup chopped onion
- 1 can (1 lb.) tomatoes, drained well and chopped
- 4 cups chopped peeled apples
Directions
- In a large saucepan, combine first 10 ingredients. Stir to mix, then bring to boil. Add 1 cup water and remaining ingredients. Bring again to boil and simmer 2 hours, or until thick and dark brown in color. Ladle into hot sterilized jars to within 1/8 of top and seal. Process in water bath 5 minutes.
