Apple Chutney

Ingredients

  • 1 lb. dark-brown sugar
  • 2 cups cider vinegar
  • 1 clove garlic, minced
  • 1/3 cup thinly sliced crystallized ginger
  • 2 Tbsp. mustard seed
  • 2 tsp. ground cloves
  • 1/4 tsp. cayenne
  • 1 tsp. salt
  • 1 lemon, seeded and thinly sliced
  • 1/2 cup raisins
  • 3/4 cup chopped green pepper
  • 1 cup chopped onion
  • 1 can (1 lb.) tomatoes, drained well and chopped
  • 4 cups chopped peeled apples

Directions

  1. In a large saucepan, combine first 10 ingredients. Stir to mix, then bring to boil. Add 1 cup water and remaining ingredients. Bring again to boil and simmer 2 hours, or until thick and dark brown in color. Ladle into hot sterilized jars to within 1/8 of top and seal. Process in water bath 5 minutes.
