Quick and Easy Crab Cakes

Serves 6 people

Ingredients

  • 1 cup boiling water
  • 1 pkg. (6oz.) Stove Top cornbread stuffing
  • 3 eggs
  • 2 cans (6oz. each) crabmeat, drained, flaked
  • 1/4 cup butter or margarine
  • 1 lemon, cut into 6 wedges

Directions

  1. Add boiling water to stuffing mix; stir just until moistened. Let stand 5 min.
  2. Beat eggs in large bowl. Add crabmeat; mix lightly. Stir in stuffing. Shape into 6 patties.
  3. Melt butter in large skillet on medium heat. Add patties; cook 5 min. on each side or until heated through and lightly browned on both sides. Serve with lemon wedges.
