Vegetable Brown Rice

Ingredients

  • 1 1/2 cup water
  • 1/2 cup quick- cooking brown rice
  • 1/2 lb. broccoli florets
  • Salt and freshly ground black pepper
  • 1/2 cup nonfat plain yogurt

Directions

  1. Place water in a medium saucepan over high heat. Add rice and bring to a boil. Reduce heat to medium and cover. Simmer 25 minutes. Add broccoli and continue to cook, covered, 5 minutes. All of the water should be absorbed and the rice cooked through. Add salt and pepper to taste and add yogurt. Toss well.
