Ingredients
- 8 Lb. pears
- 9 cups sugar
- 1 quart vinegar
- 1 pint water
- 2 Tbsp. cloves
- 2 Tbsp. allspice
- 2 Tbsp. cinnamon
Directions
- Wash and peel the pears, cutting large ones into halves or quarters. Cover with water and boil for ten minutes. Mix vinegar, water sugar and spices (tied in a bag), and boil together for 5 minutes. Drain water form the pears and add the pickling syrup. Cook slowly until the pears are tender and clear. Leave them in the syrup overnight.
- Next morning, drain off the syrup and heat it to boiling. Pack the pears in jars, cover with the hot syrup and process in a water bath at simmering temperature for 20 minutes.
