Steamed Suet Pudding

Serves 10 people

Ingredients

  • 3 cups raisins
  • 3 cups sifted flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1/2 tsp. grated nutmeg
  • 1 tsp. salt
  • 1 cup ground suet
  • 1 cup sour milk
  • 1 cup molasses

Directions

  1. Mix raisins with 1/2 cup of the flour. Sift remaining flour with dry ingredients. Combine suet, milk and molasses and add to dry ingredients. Add raisins and mix thoroughly. Fill greased pudding mold 2/3 full, cover tightly and steam 3 hours.
  2. Serve with Hard Sauce or any desired pudding sauce.
