Lemon Crunch Pie

(from Theresa Loving’s recipe box)

Ingredients

  • 8" pastry shell
  • Beat together:
  • 1 1/2 c. sugar
  • 1/2 c. coconut
  • 1/4 c. melted butter
  • 1/4 c. lemon juice
  • 1/4 c. milk
  • 2 T. flour
  • 1/4 t. salt
  • 4 eggs

Directions

  1. Bake at 375 for 40-50 minutes until filling is set. Refrigerate.
