Gazpacho

Ingredients

  • 4-5 lg. ripe tomatoes about 1 lb
  • 1 clove garlic, crushed
  • 2 lg. green pepper
  • 1/2 c olive oil
  • Juice of 1 lemon
  • 1 mild onion, small to medium
  • 3 12 ounce cans V-8
  • 1 medium cucumber
  • 3 stalks celery

Directions

  1. mix all the vegetables together add juice, lemon juice and then oil. Season with salt and pepper.
