“Eggs” on Toast

Looks like sunny-side-up eggs on toast.

Ingredients

  • 4 slices frozen cinnamon French toast
  • 1 pt. vanilla frozen yogurt or lowfat vanilla ice cream
  • 1 can (15 oz.) apricot halves in very light syrup, reserve syrup

Directions

  1. Toast French toast as package directs. When cool, put on serving plates.
  2. Using an ice cream spade (not a scoop), top each slice of toast with frozen yogurt. Make 2 shallow depressions in yogurt with back of a spoon. Place apricot halves in depressions.
  3. Spoon apricot syrup over “eggs”. Sprinkle with cinnamon sugar, if desired.
