“Eggs” on Toast

Looks like sunny-side-up eggs on toast.

Ingredients
- 4 slices frozen cinnamon French toast
- 1 pt. vanilla frozen yogurt or lowfat vanilla ice cream
- 1 can (15 oz.) apricot halves in very light syrup, reserve syrup
Directions
- Toast French toast as package directs. When cool, put on serving plates.
- Using an ice cream spade (not a scoop), top each slice of toast with frozen yogurt. Make 2 shallow depressions in yogurt with back of a spoon. Place apricot halves in depressions.
- Spoon apricot syrup over “eggs”. Sprinkle with cinnamon sugar, if desired.
