Rice-otto

Ingredients
- 1 1/2 cup dry brown rice
- about 2 cups chicken broth
- 1 package mushrooms sliced
- 1 small onion
- 1/2 cup parmesan cheese
- 1/3 stick butter
- Pan spray
- Salt and pepper to taste

Cook rice

Saute onion and mushroom in pan spray

add rice and chicken broth to pan in parts – not all at once

Stir and simmer until rice absorbs most of the chicken broth

stir in butter and parmesan cheese
