Ingredients
- 2 sticks unsalted butter, softened
- 1/2 cup firmly packed dark brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 Tbsp. grated lemon rind
- 3/4 tsp. vanilla extract
- 3/4 tsp. lemon extract
- 1/2 tsp. salt
- 1 3/4 cups flour
- 1 cup white chocolate chips, chopped in for processor
- 1 quart lemon OR vanilla ice cream OR frozen yogurt
Directions
- With an electric mixer, beat butter, brown sugar, and granulated sugar on medium speed until creamy. Beat in egg, lemon rind, vanilla and lemon extracts and salt until well blended. Add flour and beat until blended. Stir in chopped white chocolate. Form dough into a 2 1/2 inch log and wrap in plastic wrap. Refrigerate for several hours or until firm.
- Heat oven to 400 degrees. Unwrap chilled dough and thinly slice into 1/4-inch rounds with sharp knife. Bake on greased cookie sheets for 9 minutes, or just until edges start to brown. Let stand 2 minutes on cookie sheets, then remove to a rack and let cool completely.
- Arrange half of cookies on flat surface, bottom sides up. Scoop1/3 cup ice cream or frozen yogurt on each coolie. Top with another cookie. Wrap each sandwich in plastic wrap. Freeze 1 hour or until firm. keeps frozen for up to 3 days.
