Peasant-Style White Beans and Rice

Ingredients

  • 1 cup uncooked white rice
  • 1 15oz. can navy beans, rinsed and drained
  • 3 Tbsp. snipped fresh basil or 1 Tbsp. dried basil, crushed
  • 2 Tbsp. snipped fresh Italian parsley
  • 1/2 tsp. salt
  • 2 Tbsp. extra virgin olive oil

Directions

  1. Cook rice according to package directions, omitting any salt or fat.
  2. Place rice in a serving bowl. Top with beans, basil, parsley, and salt; toss gently to combine. Drizzle oil over the top. Serve with Mexican Drumsticks, if desired.
