Potato Cheddar Soup

Ingredients

  • 2 lbs new red potatoes, peeled and cut into 1/2-inch cubes
  • 3/4 cup coarsely chopped carrots
  • 1 medium onion, coarsely chopped
  • 1/2 tsp salt
  • 3 cups vegetable broth
  • 1 cup half-and-half
  • 1/4 tsp black pepper
  • 2 cups shredded Cheddar cheese

Directions

  1. Place potatoes, carrots, onion and salt in crock pot. Pour in broth. Cover and cook on LOW 6-7 hrs.

  2. Stir in half-and-half and pepper. Cover and cook on HIGH 15 minutes. Turn off heat and remove cover. Stir in cheese until melted.
