Ingredients
- 2 lbs new red potatoes, peeled and cut into 1/2-inch cubes
- 3/4 cup coarsely chopped carrots
- 1 medium onion, coarsely chopped
- 1/2 tsp salt
- 3 cups vegetable broth
- 1 cup half-and-half
- 1/4 tsp black pepper
- 2 cups shredded Cheddar cheese
Directions

Place potatoes, carrots, onion and salt in crock pot. Pour in broth. Cover and cook on LOW 6-7 hrs.

Stir in half-and-half and pepper. Cover and cook on HIGH 15 minutes. Turn off heat and remove cover. Stir in cheese until melted.
