Tabbouleh Salad

Ingredients

  • 1 cup uncooked bulgur wheat *
  • 1 cup boiling water *
  • 2 medium tomatoes, chopped
  • 4 green onions, thinly sliced
  • 1/4 cup minced fresh parsley
  • 1/4 to 1/2 cup chopped fresh mint
  • 1/2 tsp. grated lemon rind
  • 1/3 cup fresh lemon juice
  • 3 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Lettuce leaves

Directions

  1. Place bulgur wheat in a large bowl, and add boiling water. Cover and let stand 30 minutes.
  2. Stir in tomato and next 8 ingredients. Chill 1 hour. Spoon over lettuce leaves.
  3. makes 5 cups

    • 1 cup instant brown rice, cooked, may be substituted for 1 cup bulgur and 1 cup boiling water.
