Cheesy Corn and Peppers

Ingredients

  • 2 lbs frozen corn
  • 2 tbsp butter, cut into cubes
  • 2 poblano peppers, chopped or 1 large green bell pepper + 1 jalapeno, seeded and chopped
  • 3 oz cream cheese, cut into cubes
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar
  • 1 tsp salt

Directions

  1. Coat inside of crock pot with cooking spray. Combine all ingredients except cream cheese and cheddar. Cover and cook on HIGH 2 hrs.

  2. Stir in cheese. Cover and cook on HIGH 15 minutes or until cheese are melted.
