Chicken Kabobs with Chutney-Yogurt Sauce

Ingredients

  • 1 lb chicken breasts, cut into 1-inch pieces
  • 2 cups plain yogurt
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp garlic-pepper seasoning
  • 1 tbsp mango chutney
  • 2 tsp basil
  • 2 tsp mint
  • 1/4 tsp crushed red pepper
  • 1 medium green sweet pepper, cut into 1-inch pieces
  • 1 medium yellow summer squash, cut into 1-inch pieces
  • 12 cherry tomatoes

Directions

  1. Place chicken in a resealable plastic bag. For marinade, stir together 1 1/2 cups yogurt, 2 tbsp lemon juice, olive oil and garlic pepper seasoning. Pour over chicken; seal bag. Marinate in fridge 1-2 hrs. Drain chicken and discard marinade.

  2. Meanwhile, for sauce, in a small bowl stir together 1/2 cup yogurt, 1 tbsp lemon juice, chutney, basil, mint, and red pepper. Cover and chill until serving time.

  3. On four metal skewers, alternately thread chicken, sweet pepper and squash. Thread the cherry tomatoes on two separate skewers.

  4. Preheat grill to medium. Place chicken skewers on grill. Cover and grill 15-18 minutes. Add tomato skewers to grill the last 5 minutes.

  5. Serve chicken and vegetables with sauce.
