Cocoa Date Bars

Ingredients
- 3/4 cup shredded unsweetened coconut, divided use
- 1/4 cup unsalted sunflower seed butter
- 2 Tbsp. sesame seeds
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups pitted and roughly chopped Medjool dates (about 12 oz.)
- 1 tsp. coconut oil
Directions
- Line a small square baking pan with parchment paper. Scatter 1/4 cup of the shredded coconut evenly over the parchment paper.
- In a food processor, combine the sunflower seeds, the cinnamon and cloves, remaining coconut and cocoa powder and pulse to combine. Add the dates and coconut oil and process until completely combined and mixture forms a uniform sticky mass.
- Press mixture evenly in the prepared baking pan.
- Cover with plastic wrap and refrigerate for at least 2 hours or until firm. Cut into small squares before serving.
- Bars will keep in an airtight container for several days.
