Gingerbread

Ingredients

  • 2 Tbsp. butter or margarine, softened
  • 1/2 cup granulated sugar
  • 1/4 cup applesauce
  • 2 Tbsp. molasses
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1 Tbsp. ground ginger
  • 1/2 tsp. pumpkin pie spice
  • 1/2 cup nonfat buttermilk
  • 2 egg whites
  • Butter Flavor Cooking spray (Pam)
  • Garnishes: lemon curd, fresh mint sprigs

Directions

  1. Beat first 4 ingredients at medium speed with an electric mixer until blended.
  2. Combine flour and next 4 ingredients; add to butter mixture alternately with butter.milk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Add egg whites, and beat at medium speed 1 minute. Spray a 9-inch pie plate with cooking spray 5 seconds. Pour batter into pie plate.
  3. Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Garnish, if desired.
  4. Spray measuring spoon with cooking spray 1 second before measuring molasses to make it come out more easily.
