Vegetarian Nachos

Delicious meat free recipe
Can add can corn kernels (drained), chopped spinach, grated courgette, sliced mushrooms to sauce to add extra vegetables

Ingredients
- 1 red onion, finely diced
- 2 carrots, grated
- optional: 1 capsicum, finely diced
- 400 g can chopped tomatoes
- 400 g can mild chilli beans
- 400 g can red kidney beans, drained & rinsed
- 1 T sweet chilli or tomato sauce
- 1 t smoked paprika
- 1 t dried oregano
- 1 t onion powder (optional)
- 1/2 t ground cumin
- 1/2 t ground coriander
- for extra spicy flavour 1/4 - 1/2 t ground chilli
- 1 C grated cheese
- For Chipotle sour cream sauce, mix together next 3 ingredients:
- 1/2 C sour cream or natural yoghurt
- 1 T tomato sauce
- 2-3 t chipotle sauce
- To serve:
- corn chips
- fresh coriander, chopped
- finely sliced lettuce, optional
Directions

Cook onion (and capsicum if using) in a little oil about 4 minutes, until softened.

Add carrots, and spices and cook one minute.

Add tomatoes, beans, sauce, and stir while cooking gently for approx 10 minutes, until sauce thickens.

Season to taste with salt and freshly ground pepper.

Pour into a heat proof dish, sprinkle bean mix with grated cheese and grill for about 5 minutes until cheese is bubbling and golden.

To serve: place corn chips, lettuce, chipotle/sour cream sauce, coriander and bean sauce on table for people to help themselves.
