Sauteed Tomato with Fresh Mozzarella

Ingredients
- 4 large tomatoes cut into 12 slices
- 2 Tbsp. chopped fresh basil
- 1 cup soft breadcrumbs
- 1 Tsp. grated Romano cheese
- 1 tsp. minced fresh oregano
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup chopped ruby Swiss chard
- 3 Tbsp. basil-infused or plain olive oil
- 2 Tbsp. balsamic vinegar
Directions
- Cut each tomato into 3 slices. Top 6 slices evenly with mozzarella cheese. Sprinkle evenly with basil, and top with remaining tomato slices.
- Combine breadcrumbs and next 4 ingredients. Dredge each tomato stack in breadcrumb mixture.
- Cook, in batches, in a lightly greased nonstick skillet over medium heat 3 to 4 minutes on each side. Serve over Swiss chard, and drizzle evenly with oil and vinegar.
