Sauteed Tomato with Fresh Mozzarella

Ingredients

  • 4 large tomatoes cut into 12 slices
  • 2 Tbsp. chopped fresh basil
  • 1 cup soft breadcrumbs
  • 1 Tsp. grated Romano cheese
  • 1 tsp. minced fresh oregano
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup chopped ruby Swiss chard
  • 3 Tbsp. basil-infused or plain olive oil
  • 2 Tbsp. balsamic vinegar

Directions

  1. Cut each tomato into 3 slices. Top 6 slices evenly with mozzarella cheese. Sprinkle evenly with basil, and top with remaining tomato slices.
  2. Combine breadcrumbs and next 4 ingredients. Dredge each tomato stack in breadcrumb mixture.
  3. Cook, in batches, in a lightly greased nonstick skillet over medium heat 3 to 4 minutes on each side. Serve over Swiss chard, and drizzle evenly with oil and vinegar.
