Ingredients
- 8 small red potatoes, quartered
- 1 large onion, peeled and cut into wedges
- 1 apple, peeled, cored and finely diced
- 3 to 4-pounds of corned beef brisket
- 1/2 head of cabbage, cut into chunks
- 4 cups apple cider
- 3/4 cup brown sugar, packed
- 2 tbs Dijon mustard
- 1/4 tsp ground cloves
- 1/4 tsp black pepper
Directions

Place potatoes, onion and apple in a large crockpot.

Top with corned beef brisket.

Place cabbage on top.

In a small bowl whisk together rest of ingredients.

Pour over items in the crockpot.

Cook on low for 6 to 8 hrs or on high for3 to 4 hrs.
