Ingredients
- 1 (8oz.) pkg. egg noodles
- 1 1/2 lbs. sirloin steak, cut into thin strips
- 2 tsp. olive oil
- vegetable cooking spray
- 1 large sweet onion, diced
- 1 (8oz.) pkg. sliced fresh mushrooms
- 2 Tbsp. all=purpose flour
- 1 (14.25 oz.) can low-sodium fat-free beef broth
- 3 Tbsp. tomato paste
- 3 Tbsp. dry sherry
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. dried tarragon
- 1 (8oz.) container fat-free sour cream
- 2 Tbsp. chopped fresh parsley
Directions
- Cook noodles according to package directions, omitting salt and fat.
- Cook beef, in 2 batches, in hot oil in a large nonstick skillet coated with cooking spray over medium-high heat 3 to 4 minutes or just until browned. Remove from skillet, and sauté over medium-high heat 2 minutes. Add mushrooms, and sauté 3 minutes. Sprinkle with flour, and stir until blended. Add beef broth and tomato paste, and cook stirring constantly, 2 to 3 minutes or until thickened.
- Return beef to skillet; add sherry and next 3 ingredients. Reduce heat to low; simmer 5 minutes. Remove from heat; stir in sour cream. Sprinkle with parsley. Serve over hot cooked noodles.
