Ingredients
- 1 large sweet onion, chopped
- 6 garlic cloves, minced
- 3/4 cup soy sauce
- 1 cup vinegar
- 2 chipotle peppers in adobo sauce, minced
- 2 lbs chicken thighs
- 1 bay leaf
- 1/2 tbsp whole peppercorns, slightly crushed
Directions

Place bay leaf, onion, and half the garlic in the bottom of a crock pot, then cover with chicken.

Mix together the remaining ingredients and pour over chicken.

Cover and cook on HIGH for 4 hours or on LOW 6-8 hours.
