Green Pea Salad with Dill

Ingredients

  • 1 lb. frozen petite pes, thawed overnight in refrigerator
  • Scant 1/2 cup Duke's mayonnaise mixed with 1/2 tsp. sugar (see note)
  • 1/2 cup shredded cheddar cheese
  • 5 green onions, white and firm green parts, chopped fine
  • 1/4 cup snipped fresh dill or more to taste
  • 2 Tbsp. chopped fresh mint or tarragon or more to taste
  • Coarse salt and pepper to taste

Directions

  1. In a large bowl, combine all ingredients; mix gently. Cover and refrigerate overnight. Taste after 24 hours and adjust for more herbs if necessary and return to refrigerator. About 30 minutes before serving, remove from refrigerator.
  2. Note: Can use any brand mayonnaise. If other mayonnaise has sugar, omit the sugar in this recipe.
