Green Pea Salad with Dill

Ingredients
- 1 lb. frozen petite pes, thawed overnight in refrigerator
- Scant 1/2 cup Duke's mayonnaise mixed with 1/2 tsp. sugar (see note)
- 1/2 cup shredded cheddar cheese
- 5 green onions, white and firm green parts, chopped fine
- 1/4 cup snipped fresh dill or more to taste
- 2 Tbsp. chopped fresh mint or tarragon or more to taste
- Coarse salt and pepper to taste
Directions
- In a large bowl, combine all ingredients; mix gently. Cover and refrigerate overnight. Taste after 24 hours and adjust for more herbs if necessary and return to refrigerator. About 30 minutes before serving, remove from refrigerator.

Note: Can use any brand mayonnaise. If other mayonnaise has sugar, omit the sugar in this recipe.
