Thai Brisket Sandwiches

Ingredients

  • 2 1/2 lbs. flat-cut brisket
  • 6 scallions
  • 1/4 cup mirin (rice wine)
  • 3 Tbsp. Thai red curry paste
  • 1 cup beef broth
  • 1 1/2 baguettes
  • cilantro
  • shredded carrot
  • mayonnaise
  • Sriracha

Directions

  1. Place brisket in a slow cooker, fat side up. Slice scallions into 1-inch pieces ad add to slow cooker. Whisk next 3 ingredients and pour over brisket. Cover and cook on HIGH until meat is tender, 5 hours.
  2. Transfer meat to cutting board and let rest 20 minutes before slicing. Meanwhile, pour sauce into a measuring cup and skim off fat. Slice baguettes with sauce, cilantro, carrot, mayonnaise and Sriracha.
