Acorn Squash Casserole

Ingredients

  • 2 medium acorn squash, peeled and diced
  • 6 slices bacon
  • 1-2 links large smoked sausage
  • 1 chopped onion
  • 2 ribs celery, chopped
  • 1/2 chopped bell pepper
  • Parsley
  • Clove of garlic
  • 1 stock margarine
  • 1-3 cups bread crumbs
  • salt and pepper

Directions

  1. Boil diced squash until tender. While squash cooks, fry bacon until crisp. Remove from skillet;
  2. reserve drippings.

  3. In same skillet, cook smoked sausage until done. Save to grease in the skillet. Drain and mash squash.
  4. In skillet where bacon and sausage were cooked, cook the onion, celery, bell pepper, parsley and garlic until tender. Remove and drain.
  5. Mix squash, meat and vegetables together. Add margarine and bread crumbs and cook a few minutes to warm. Add salt and pepper. Top with bread crumbs and butter. Bake in greased casserole mat 300 degrees for 45 minutes.
