Ingredients
- 2 medium acorn squash, peeled and diced
- 6 slices bacon
- 1-2 links large smoked sausage
- 1 chopped onion
- 2 ribs celery, chopped
- 1/2 chopped bell pepper
- Parsley
- Clove of garlic
- 1 stock margarine
- 1-3 cups bread crumbs
- salt and pepper
Directions
- Boil diced squash until tender. While squash cooks, fry bacon until crisp. Remove from skillet;

reserve drippings.
- In same skillet, cook smoked sausage until done. Save to grease in the skillet. Drain and mash squash.
- In skillet where bacon and sausage were cooked, cook the onion, celery, bell pepper, parsley and garlic until tender. Remove and drain.
- Mix squash, meat and vegetables together. Add margarine and bread crumbs and cook a few minutes to warm. Add salt and pepper. Top with bread crumbs and butter. Bake in greased casserole mat 300 degrees for 45 minutes.
