Artichoke-Rice Salad

Ingredients

  • 1 (8oz.) pkg. chicken-flavored vermicelli-rice mix
  • 1 (6 1/4oz.) pkg. fried rice mix with almonds
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onion
  • 1/2 cup chopped pimiento-stuffed olives
  • 2 (6 oz.) jars marinated artichoke hearts, drained and sliced
  • 1/2 cup mayonnaise
  • 1 tsp. curry powder

Directions

  1. Prepare rice mixes according to package directions, omitting margarine. Cool.

  2. Combine rice and remaining ingredients, tossing lightly; chill.
