Ingredients
- 1 lb. potatoes
- 1 onion, finely diced
- 3 cloves of garlic, minced
- 1 tsp. oil
- 1 pint water
- 1 fresh hot pepper (Scotch Bonnet)
- salt to taste
Directions

In a large pot of water, cook peeled and washed potatoes until soft. Drain them, then return to the pot and add salt.

In a small skillet, heat oil and add onion and garlic and saute until soft. Add the hot pepper, then quickly mix this in with the mashed potatoes and serve.
