Ingredients
- 1 can (1 lb. 4 oz.) chick-peas, drained
- 2 Tbsp. lemon juice
- 2 Tbsp. orange juice
- 1/2 cup olive oil or vegetable oil
- 1/2 tsp. grated orange rind
- 1 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 10-12 crisp lettuce leaves
- 3 avocados, peeled and sliced
- lemon juice
- 4-5 navel oranges, peeled and sliced
- 3 Tbsp. finely chopped parsley
Directions

Toss chick-peas with lemon juice, orange juice, olive oil, orange rind, salt and pepper. Cover, refrigerate at least 1 hour or longer.

Arrange lettuce leaves on serving plates. Arrange avocado slices on top and sprinkle with lemon juice. Arrange orange slices, on top of all, and sprinkle with parsley.
