Ingredients
- 6 tbsp olive oil, divided
- 2 cups diced white bread
- 1 tsp minced fresh garlic
- salt and black pepper to taste
- 2 cups arugula
- 2 cups chopped radicchio
- 2 cups chopped romaine lettuce
- 3 tbsp fresh lemon juice
- 2 tsp honey

Heat 3 tbsp oil in a nonstick skillet over medium. Add bread; cook until toasted, 4-5 minutes, stirring occasionally. Stir in garlic and cook 1 minute more. Season croutons with salt and pepper.

Combine arugula, radicchio, and romaine in a large bowl for the salad; season with salt and pepper.

Whisk together lemon juice, remaining 3 tbsp oil and honey; toss with salad. Top salad with croutons.
