Apricot Jewels

Ingredients

  • Cookies
  • 1 1/4 cups Pillsbury Best All Purpose or Unbleached Flour
  • 1/4 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup margarine or butter, softened
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1/2 cup flaked coconut
  • 1/2 cup apricot preserves
  • Frosting:
  • 1 cup powdered sugar
  • 1/4 cup apricot preserves
  • 1 Tbsp. margarine or butter, softened

Directions

  1. Heat oven to 350 degrees.

  2. Lightly spoon flour into measuring cup; level off.

  3. In large bowl, combine flour, sugar, baking powder and salt. Using fork or pastry blender, cut in margarine and cream cheese until mixture

  4. is crumbly. Add coconut and 1/2 cup preserves; blend well. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

  5. Bake at 350 degrees for 15 to 18 minutes or until golden brown. Immediately remove from cookie sheets. Cool completely.

  6. I medium bowl, beat all frosting ingredients until smooth. Frost cooled cookies; allow frosting to set before storing.

  7. 3 dozen cookies
