Apple Cottage Pudding

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup (1/4 lb.) butter or margarine, melted
  • 2 cups chopped tart green apple, or fresh or frozen cranberries, rinsed
  • Lemon sauce :
  • 2/3 cup sugar
  • 2 Tbsp. cornstarch
  • 1 1/3 cups water
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. lemon juice

Directions

  1. In a bowl, mix flour, sugar, baking powder, and baking soda. Add egg milk and butter and whisk together to blend smoothly. Stir in apple.

  2. Pour batter into a buttered shallow 2 quart baking dish. Bake in a 400 degree oven until well browned, about 35 minutes. Spoon warm or cool pudding into bowls an top with lemon sauce.

  3. Lemon Sauce:

  4. In a 2 to 3 quart pan, blend sugar, cornstarch, and water. Stir on high heat until boiling rapidly. Stir on high heat until boiling rapidly. Stir in butter and lemon juice; remove from heat. Use warm or cool.
