Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 large egg
- 1/2 cup milk
- 1/2 cup (1/4 lb.) butter or margarine, melted
- 2 cups chopped tart green apple, or fresh or frozen cranberries, rinsed
- Lemon sauce :
- 2/3 cup sugar
- 2 Tbsp. cornstarch
- 1 1/3 cups water
- 3 Tbsp. butter or margarine
- 3 Tbsp. lemon juice
Directions

In a bowl, mix flour, sugar, baking powder, and baking soda. Add egg milk and butter and whisk together to blend smoothly. Stir in apple.

Pour batter into a buttered shallow 2 quart baking dish. Bake in a 400 degree oven until well browned, about 35 minutes. Spoon warm or cool pudding into bowls an top with lemon sauce.

Lemon Sauce:

In a 2 to 3 quart pan, blend sugar, cornstarch, and water. Stir on high heat until boiling rapidly. Stir on high heat until boiling rapidly. Stir in butter and lemon juice; remove from heat. Use warm or cool.
