Ingredients
- 3 lbs. fingerling potatoes, halved lengthwise
- 1 1/2 cups white vinegar
- 3 tbsp. peanut oil
- 1 1/2 tsp kosher salt
- Sea salt
Directions

Cook potatoes in a large pot of salted boiling water mixed with vinegar until just tender, 20 minutes. Drain; toss with peanut oil and kosher salt.

Roast at 500 until golden, 20 minutes. Top with sea salt.
