Ingredients
- 1 large can apricots, peeled
- 2 pkg. apricot gelatin
- 1 large can crushed pineapple
- 2 cups hot water
- 1 cup miniature marshmallows
- 1 cup nuts (optional)
- Toppings:
- 1/2 cup sugar
- 3 Tbsp. flour
- 1 egg slightly beaten
- 3/4 cup grated, sharp cheddar cheese
- 1 cup reserved fruit juice
- 2 Tbsp. butter
Directions

Drain fruits, reserving juices.

Dice apricots. Dissolve gelatin in hot water-add 1 cup fruit juice. Chill until just beginning to set.

Fold in fruit and marshmallows. Pour into large pan. Chill until congealed.

Topping: Combine all ingredients except butter in a double boiler; cook until thick. Add butter and cool. Fold in 2 cups Cool Whip and grated cheese. Spread over salad.
