Apricot Cheese Delight

Ingredients

  • 1 large can apricots, peeled
  • 2 pkg. apricot gelatin
  • 1 large can crushed pineapple
  • 2 cups hot water
  • 1 cup miniature marshmallows
  • 1 cup nuts (optional)
  • Toppings:
  • 1/2 cup sugar
  • 3 Tbsp. flour
  • 1 egg slightly beaten
  • 3/4 cup grated, sharp cheddar cheese
  • 1 cup reserved fruit juice
  • 2 Tbsp. butter

Directions

  1. Drain fruits, reserving juices.

  2. Dice apricots. Dissolve gelatin in hot water-add 1 cup fruit juice. Chill until just beginning to set.

  3. Fold in fruit and marshmallows. Pour into large pan. Chill until congealed.

  4. Topping: Combine all ingredients except butter in a double boiler; cook until thick. Add butter and cool. Fold in 2 cups Cool Whip and grated cheese. Spread over salad.
