Asian pear and Shrimp Salad

Ingredients

  • Lemon Dressing:
  • 1/2 cup olive or salad oil
  • 1/3 cup lemon juice
  • 2 Tbsp. minced parsley
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • Salad:
  • Lettuce leaves
  • 1 lb. shelled, deveined, cooked large shrimp
  • 2 Asian pears, cored and sliced thin
  • 1 cup julienne sticks cucumber
  • 1 cup fresh watercress sprigs

Directions

  1. For dressing:

  2. Place all ingredients in a shaker jar or blender. Cover and shake or blend until mixed.

  3. Arrange lettuce leaves on a large salad platter. Mound the shrimp in center of lettuce; arrange Asian pear slices in fanned groups around edge of platter. Place cucumber sticks between Asian pear slices; garnish with watercress sprigs Shake dressing again; pour over salad, or pass with salad.
